A key selling point was the optimization of physical space, particularly reducing the clutter caused by storing cases of bones in the establishments’ freezers. To overcome initial hesitations, the chosen strategy was direct, on-site tastings, in the presence of chefs and their teams, allowing for an immediate and convincing culinary experience.

As the product range rapidly expanded, a new challenge emerged: adapting production methods while preserving quality and remaining faithful to the company’s mission—maintaining an artisanal manufacturing method aligned with culinary best practices.

However, the most significant challenge has been the sourcing of raw materials. In 2025, scarcity and susbtantial cost increases became major issues, directly affecting the company’s growth trajectory. In response, the business plan was revised to guarantee product quality while maintaining competitive prices for the clientele.

In 2026, the development of new markets marks an important milestone in continuing this momentum.
